This fudge is pretty much made up of my three favorite things: chocolate, peppermint, and, well... it's fudge. This is pretty much holiday-perfection in my book, and so easy to make, too!

Ingredients:

- 1 bag of chocolate chips or morsels (I used dark chocolate)
- 1 bag Hershey kisses
- 1 bag of Candy Cane Hershey Kisses
- 2 bags white chocolate chips (minus 1/2 C)
- 1/3 to 1/2 C Andes Peppermint Crunch baking chips

- 2 cans 14 oz condensed milk
- 2 C crushed Oreos (about 1.5 rows out of the standard pack)

Directions:

- Line a 9 x 13 baking dish with parchment paper and light spray it.
- Pour all your [semi-sweet, milk, or dark] chocolate chips into a large saucepan with your entire bag of Hershey kisses (sans wrappers, obviously) and one can of condensed milk. Over low heat, melt the chocolates, stirring occasionally to prevent burning on the bottom.
*Note: Do not do ANYTHING but low heat. I tried, and it did not work. The chocolates burned and I may or may not have had to buy new supplies and start all over again... maybe.

- Once the chocolates are well melted (should be pulling away from sides with very few "bumps" in it), carefully fold in one cup of crushed Oreos. Spread the mixture over the bottom of your prepared baking dish as evenly as possible. Place in fridge temporarily.
- Wash out your saucepan. Next, add your white chocolate chips, Andes mint pieces, and condensed milk. Proceed to melt over low heat, as done previously, stirring occasionally. You want to stir these a little more because if they burn you will see it!


- When these are done melting, take your dish out of the fridge and spread it over the already prepared chocolate fudge mix.
- Sprinkle your remaining Oreos on top, as well as extra Andes mint pieces if desired, and slightly/gently press them into the fudge.


- Place in the fridge for at least five hours, but preferably over night.
- Set your fudge out and give it a few (at least ten, I'd say) minutes before attempting to cut it.


Serve, give away, eat it all (it's BEYOND addicting)... your choice!

Halloween was one fun day in our house. It was the first full day Dada was home, which meant Michael was up and about (refusing to nap, of course) and just loving helping/playing with his daddy.





He had a lot of fun trick-or-treating. He kept saying, "Trick or treat, candy please!" It was more of one sentence stringing together as a demand, not a request. We'll have to work on that. The first house had mini Hershey bars, and somehow Michael knew immediately that it was "chocate", so every time we stopped or he thought we weren't looking he was trying to dig through his blue pumpkin to get it out and eat it.






The poor little guy tuckered out after only five houses or so because he hadn't napped. Two minutes in to our car ride home (we drove to a friend's neighborhood for a nice group of little ones to go together) he fell asleep. I did, however, give him a piece of that chocolate bar he had wanted so badly before he fell asleep. I mean, it was Halloween. He had to have a little pieces of his labor, right? I won't say we raided his candy when we got home, but I won't say we didn't either.

This is the best thing I made this season. Seriously. Clark ate so many he made himself sick. And I definitely couldn't resist "taste testing" a few before handing them out to friends.

So, if you're on a diet, or a chocolate-chip-cookie-dough-fiend... I wouldn't suggest making these... because you may end up eating them all.

Ingredients:

- 2.5 C flour
- 1 tsp salt
- 1 C butter at room temperature
- 3/4 C sugar
- 3/4 C brown sugar
- 1 tsp vanilla
- 1/3 C milk (I used skim)
- 1 C mini semi-sweet chocolate chips
*As you will see in the pictures, I used the regular semi-sweet morsels and used the seasonal! It does make them a bit harder to make, and not as many chocolate chips in each truffle, but I wanted to be festive!*
- Package of candi-quick coating
*I do think dark chocolate works the best, but I could only find milk chocolate at our grocery store.*

Directions:

- Beat the butter and sugars together with a hand held or standing mixer. Add the vanilla and milk.
- Add your dry ingredients (flour and salt) and mix until well combined.
- Mix in your chocolate chips.

- Line a cookie sheet with wax paper. Roll as many cookie-dough balls as you can. Make them with about 1 tbsp each (although mine got bigger as the process went on).

- Put them in the freezer for at least 30 minutes. When you're getting ready to take them out, prepare/melt your candy coating.

- Use a fork and drop each ball into the bowl with your candy coating and then remove them and return them to the wax paper. Repeat this process until they are all done. Let them set before moving them.

- Once you make them, these will stay in the fridge in an air-tight container for a good week. I found they were a HUGE hit to give away to friends!
*These had been sitting in the fridge for a couple days before I finally got to taking pictures-- and it was late at night, yet it still looks SO delicious!*
